Dark Chocolate Banana Waffles

This post is proof that I don't always eat healthy. I definitely, however, prefer MAKING my cheat meals. My binge days are usually one of the days of the weekend and I try to limit myself to just one day, but that doesn't always happen :)

I wanted to make dinner for my family on Sunday night to give mum a break from cooking. The fam loves the stuff I make, and cooking is a stress buster for me. That, plus my sweet cravings yesterday = Waffles.

You should know that I really am not a fan of overly sweet desserts, which is why you'll find these waffles to be just right.

You can follow me on Instagram @varshabhashyakarla for more foodporn and to know about my life. Use the #thatgoodlifethough to take me through your cooking journey so I can see all the wonderful things you whip up. Feel free to leave your thoughts and comments under this post. That said, let's skip right ahead to the recipe :)

Makes about 5 waffles

You will need:

A waffle maker ofc, I use this one by oster, but you can find them on Amazon, in stores etc

Dark chocolate powder (unsweetened) : 2 tbsp

All purpose flour/maida: 2 cups (feel free to use almond/ wheat flour instead)

Bananas: 2 ripe and mashed

Milk: 1 cup

Eggs: 2

Vegetable oil: 1/4 cup

Sugar: 1/4 cup

Vanilla extract: 1 tsp

Baking powder: 1 tsp

Baking soda: 1/2 tsp

Salt: 1/2 tsp

Cinnamon: 1/2 tsp

Nutmeg: 1/4 tsp

POA:

Start by combining all the dry ingredients in a medium sized bowl- flour, dark chocolate powder, sugar, baking powder, baking soda, salt, cinnamon and nutmeg. Mix everything in well.

Then in a large bowl, add in the bananas, eggs, milk, vegetable oil, vanilla extract. Whisk that up with an electric/ hand whisk. Make sure it doesn't have any lumps.

Then add all the dry ingredients in the large bowl. (TIP: if you're using an electric whisk, first stir in the dry ingredients with a handheld whisk or a large spoon, else all of the powders will go flying creating a mess lol). Whisk this until smooth and combined.

Brush the waffle iron very lightly with vegetable oil and cook according to the instructions on the waffle maker.

Top with bananas/ nutella /nuts / maple syrup/ ice cream/ all aforementioned :)

Have a great week y'all.

Until next time xo.
