Spicy Grilled Vegetable Sandwich



I've been craving a well made sandwich for quite sometime now. This particular recipe is one of my favorites because even though it's dairy-free, it's extremely creamy and delicious.

So let's get started.


Makes two sandwiches


You will need:

Bread- 4 slices ( I used sourdough which is my absolute favorite)

Pepper(red/yellow/green) - 1/2 cut longitudinally

Zucchini- 1/2 (around 10 slices)

Tomato- 1 large cut into thick slices

Italian Eggplant- (1/2 cut into 1cm thick slices, salted and peppered immediately after cutting)

Onion- 1 cut into thick cubes

Sriracha Hummus- 3 tbsp

Olive oil- 1 tbsp

Sriracha/Chilli Sauce- 1 tsp

Salt and pepper to taste

Chilli flakes- 1 tsp


POA:

Brush a grill pan lightly with oil and put it over the heat for a minute(This is similar to what I use)

Place the eggplant and zucchini and tomato​ slices and brush the upper side with olive oil. If you have space, you can throw in the peppers and onions too; or else you can make this in two batches. Brush lightly with olive oil.

Once each side is grilled adequately, take your vegetables off the flame onto a plate.

Brush the slices of bread with olive oil and grill in an electric grill. I use one similar to this. You may even toast it/ fry over a pan.

Assembly:

Spread the hummus generously over 2 slices of bread, and lightly over the other two. (Place your vegetables over the slice with more hummus, as it helps stick any filling better). Start with a layer of eggplant, followed by the peppers and onions. Then put in a layer of the zucchini, followed by the tomato slices. Garnish with some hot sauce if you like your food spicy like I do :). Close off your sandwiches with the other two slices and slightly pressed down to make it a little more compact. (TIP: A way to make sandwiches zero messy is by adding all of the filling and hummus first to the bread and grilling all of this on the electric grill, that's how I made these)
