The Best Mushroom Toasts
I've never been a fan of mushrooms before; but I've been loving them over the past few months. You dont get all types of mushrooms where I live, I could get my hands on some button mushrooms though. I usually put them in stir fry and grills, but decided to experiment a little more this time.
I had been to a Tapas style restaurant in the US a while ago, where I had these amazing roasted mushrooms. It was made with caramelized onions, local cheese and 30 year old Sherry. So this is kind of a healthier version of that. Let's get cookin' shall we!
Makes 2 toasts
You will need:
Button Mushrooms- 4 medium to large, sliced
Onion-1 Medium sliced
Garlic- 2-3 cloves chopped finely
Balsamic Vinegar- 2 tbsp
Olive oil: 1 1/2 tbsp
Green chilli sauce- 1 tsp
Mozzarella Cheese- To top the toasts
Chopped fresh basil- to season
Salt and pepper to taste
Two slices of your favorite bread

Start with heating a tbsp of oil in a pan. Add the chopped garlic and onion slices and sauté till everything is lightly browned. Add in the mushrooms. Sauté for a minute till it softens. Add the balsamic vinegar, chilli sauce, salt and pepper and saute for another minute. Set aside.
Take the bread slice and add the mushroom mixture over it. Grate some mozzarella cheese over it, and season with fresh chopped basil. You can add oregano andchilli flakes for some more heat. Repeat with the other slice.
Then, to a shallow pan, smear the rest of the olive oil. Place the prepared bread slices on the pan over a low flame and cover with the lid(this will help the cheese melt). Keep it on for 2-3 minutes checking the bottom of the bread every minute using a flat spoon. Remove from the flame onto a serving plate and devour!
